Directions
Take a skillet and heat olive oil in it. Once hot, add the beaten eggs along with the Original Blend. Cook the eggs for couple of minutes or till you feel satisfied. Directions
Preheat the oven at 350° F. In a greased baking dish, place the chicken breasts. Use the Taco seasoning mix to season the chicken properly. Pour ½ cup salsa directly over the chicken and place the baking dish inside the oven. Bake the chicken for about 30-40 minutes or till it's tender. In a small bowl, mix ½ cup salsa and sour cream together. To serve the chicken, place the chicken breasts on the plate and serve it with salsa-sour cream dip. You can also make Spanish rice to serve with the chicken.

  • 17 oz can tiny peas, drained
  • 16 oz can bean sprouts, drained
  • 12 oz can whole kernel white corn, drained
  • 6 oz can sliced mushrooms, drained
  • 5 oz can water chestnuts, drained and sliced
  • 4 oz can pimiento, drained and sliced
  • 1 green pepper, chopped
  • 1 onion, sliced
  • 1 cup chopped celery
  • 1 cup extra-virgin olive oil
  • 1 cup water
  • 1 cup sugar
  • ½ cup vinegar
  • Kosher salt and black pepper, to taste
Directions
To make the salad, take a large bowl to mix all the ingredients, except for olive oil, water, sugar, vinegar, salt, pepper. In a smaller bowl, pour the rest of the ingredients to make the dressing. Pour it over the salad, stir everything properly, and chill in the refrigerator till lunch. Serve the salad chilled.

Chicken Marsala

  • 2 boneless chicken breasts, sliced in half horizontally
  • 1 tablespoon parsley, chopped
  • 1 tablespoon olive oil
  • ⅛ teaspoon black pepper
  • ¼ teaspoon salt
  • ¼ cup flour
  • ½ cup Marsala wine
  • ½ cup chicken stock
  • ½ cup sliced mushrooms
  • ½ lemon juice
Directions
In a bowl, mix flour, salt, and black pepper, and coat the chicken breasts with this flour. Take a skillet, pour olive oil in it and brown the chicken breasts from all sides. Once the chicken is done, take it out and add Marsala wine in it. Heat the wine and then add lemon juice, chicken stock, and mushrooms in. Stir everything together for 10 minutes. After the sauce is ready, place the chicken back in, place the cover, and cook for at least 10 minutes. To serve, place the chicken breast in the serving plate and garnish with chopped parsley.

Ingredients
  • 16-18 shrimp, peeled and deveined
  • 8 skewers
  • 2 tablespoons Dijon mustard
  • 1 zucchini, sliced into ½" slices
  • 1 yellow squash, sliced into ½" slices
  • 1 red bell pepper, seeded and sliced into ½" slices
  • 1 tablespoon olive oil
  • ¼ cup half and half cream
  • ¼ cup water
  • Mrs. Dash® Extra Spicy Seasoning Blend, for taste
Directions
Ready the grill. In a pan, mix spicy seasoning blend, water, half and half cream, and Dijon mustard together. Let it simmer for about couple of minutes and keep it aside. Take the skewers and start threading shrimp, yellow squash, zucchini, and bell peppers in. Brush the mustard dressing we just prepared generously over shrimp and veggies. Place on the grill and cook evenly on all sides, turning frequently. Once ready, remove shrimp and veggies from the skewers and drizzle more mustard dressing on. Serve hot.

  • 1½ cups Splenda
  • 16 oz. low-fat, nondairy whipped topping
  • 1 teaspoon vanilla extract

  • 1 egg, beaten
  • 1 cup butter, room temperature
  • ½ teaspoon baking powder
Directions
Preheat the oven at about 375°F. Take a bowl to combine white flour, baking soda, and baking powder together. In another bowl, combine Splenda, butter, vanilla extract, and butter. Mix properly and add the dry ingredients in with the wet ingredients. Keep mixing till the dough is formed and you can scoop it to make small balls. On a cookie sheet, place the small balls and flatten them with a flat-bottom bowl, just a little. Place the cookie sheet in the oven for about 8 to 10 minutes. Once the cookies are ready, bring them out and leave them aside to cool down. When the cookies are cool enough, spread whipped topping on one cookie and place another one on top. With a Saran wrap, cover each cookie and place them in the freezer for about an hour or two. Serve the cookies nice and chilled.
