Ingredients

  • 1 rotisserie chicken, skin removed and shredded chicken
  • ¾ cup diced celery
  • 1 cup halved seedless grapes
  • 1 tbsp. chopped fresh dill
  • ½ tsp. kosher salt
  • 1 tsp. black pepper
  • 1 tbsp. apple cider vinegar
  • ¼ cup raw almond slivers
  • ½ cup diced onion
  • 1/8 tsp. garlic powder
  • ¼ cup tahini
  • ½ tsp. mustard

Directions

In a medium sized bowl, combine shredded chicken, celery, grapes, onion and almonds in a bowl. Mix well. Then, toss in the remaining ingredients and blend all together. Refrigerate for two hours before serving for the best flavor.

Veggie Chicken Salad

Ingredients

  • 2 lb. precooked diced or shredded chicken breast
  • 2/3 cup of Whole30 approved mayo
  • 1 cup diced celery
  • ¾ cup of diced bell peppers
  • ¾ tsp Dijon mustard
  • 1 tsp. kosher salt
  • 1 ½ tsp. black pepper
  • ¾ cup chopped green onions

Directions

In a large bowl, mix diced or shredded chicken well with all veggies. Add in mayo, mustard, salt and pepper. Mix well. For best flavor, refrigerate for about two hours before serving.

Buffalo Chicken Salad

Ingredients

  • 4 cups of finely diced chicken
  • 5 tbsp. hot pepper sauce (or more if you love spicy flavor)
  • ½ cup grated carrots
  • ½ cup grated celery
  • ½ tsp kosher salt
  • ½ tsp black pepper
  • ½ cup of Whole30 approved store-bought or pre-made mayo
