Almond Cookies
Ingredients
- Margarine – 5 tablespoons
- Sugar – 1½ tablespoons
- Egg white – 1 tablespoon
- Almond extract – ¼ teaspoon
- Unbleached All-purpose flour – 1 cup
- Baking soda – ⅛ tablespoon
- Pinch cream of tartar
- Almond slices – 32
Procedure
First preheat the oven to 350 ºF. Take a medium-sized bowl and combine the margarine and sugar in it. Beat this mixture to attain a light and fluffy texture. Then, add the egg white and almond extract to this mixture. Mix the ingredients properly. Then, combine the flour, baking soda, and cream of tartar into it. Knead the ingredients and make small balls out of the dough. Grease a cookie sheet with cooking spray and place the small cookie balls on it. Place an almond slice over each cookie and bake the cookies for about 8-10 minutes in a preheated oven.
Choco-Chip Cookies
Ingredients
- Margarine – ⅔ cup
- Brown sugar – ⅔ cup
- Sugar substitute – ⅔ cup
- Vanilla extract – 2 teaspoons
- Large eggs – 2
- All-purpose flour – 1½ cups
- Baking soda – 1 teaspoon
- Salt – ¼ teaspoon
- Semi-sweet chocolate chips – 1 cup
Procedure
In a small bowl add butter, sugar substitute, vanilla extract, and brown sugar. Combine these ingredients to attain a creamy texture. Then, add eggs into this mixture, one at a time and mix the ingredients properly. Combine the baking soda and flour to this mixture and stir in the chocolate chips. Drop the cookie dough on a greased cookie sheet with help of a tablespoon. Bake the cookies in preheated oven at 350 ºF for about 10-12 minutes.
Cinnamon Cookies
Ingredients
- Large eggs – 2
- Water – 2 tablespoons
- Granulated sugar replacement – 5 teaspoons
- Ground cinnamon – 1 teaspoon
- All-purpose flour – 1½ cup
- Baking soda – ½ teaspoon
- Salt – ¼ teaspoon
Procedure
Beat the eggs and water in a medium-sized bowl to attain a light and fluffy texture. Then, add in the sugar replacement and cinnamon to this mixture. Combine baking soda, salt, and all-purpose flour in the container of a sifter and add half of this mixture into the egg mixture. Mix the ingredients and prepare the cookie dough. Combine the remaining flour mixture with this dough. With the help of a teaspoon, drop this cookie dough on a greased cookie sheet and bake the cookies in a preheated oven for about 10-12 minutes at 375 ºF.
