Whole30 Stuffed Peppers: Cook Your Own Whole30 Meals at Home

Home / Whole30 / Whole30 Stuffed Peppers: Cook Your Own Whole30 Meals at Home

When you choose to follow a Whole30 eating plan, you often have to make sacrifices in the food department. But sacrificing food doesn’t mean you must sacrifice flavor, too. Begin your own Whole30 cooking by checking out these recipes for Whole30 stuffed peppers. Who knows, you just might find yourself in the kitchen more often.

Quick Whole30 Rundown

In case you’re on the cusp of this new approach to food, we will give you a quick rundown of the basics. Though it may seem crushing at first, it’s definitely doable.

Whole30 means you can only eat whole foods for 30 days straight. If you cheat, you must start over for the plan to work. Overall, it is meant to be a reset for your body. Eating whole foods means you can’t have:

  • Grains and most legumes
  • Real or artificial sugar
  • Alcohol
  • Dairy
  • Baked goods or junk food

Furthermore, you can’t take any body measurements of any kind for that 30-day period, either. This plan’s focus is about setting yourself up for healthy habits and learning what foods may be interfering with proper digestion. After 30 days, you slowly begin adding in eliminated foods (if you wish). However, if you notice that you begin feeling poorly after reintroducing any particular foods, you’ll learn that is a trigger food for your body.

Whole30 Stuffed Pepper Recipes

Now, we’ve come to the moment you’ve been waiting for. Keep reading for a few different Whole30 stuffed pepper recipes.

Spicy Stuffed Peppers

Ingredients

  • 4 whole peppers (cut in half and cleaned out)
  • ½ lb. ground chicken or turkey
  • 1 cup of kale or spinach (or a mixture of both)
  • ½ tsp cayenne pepper
  • ¾ tsp black pepper
  • ¾ tsp garlic
  • ½ tsp chili powder
  • Assorted toppings like green onions, avocado and olives

Directions

First, preheat your oven to 425 degrees. Then, begin cooking your meat. Once the meat is almost done, add in the spinach or kale along with all of your spices. After simmering for about five minutes, remove from heat. Stuff each pepper with equal amounts of the meat mixture. Finally, pop those pretty peppers in the oven for 20 minutes. You’ll want to make sure your peppers are soft. If not, place them back in the oven for a few more minutes.

Savory Beef Stuffed Peppers

Ingredients

  • 7 yellow bell peppers (halved and cleaned out in the middle)
  • 1½ tbsp olive oil
  • 1 lb. ground beef
  • 1 cup riced cauliflower
  • ¾ tsp pepper
  • ½ tsp salt
  • 1½ cups tomato sauce
  • 1 tbsp minced garlic
  • ½ tsp cumin
  • 1 cup finely shredded carrots

Directions

Grab a large pan. Heat your olive oil and cook the beef. When you see the meat is almost cooked, add in the carrots. Cook until meat is done and carrots are soft. Then, remove from heat. Stir in spices, tomato sauce and riced cauliflower. Evenly stuff each pepper with the meat mixture.

Now, snag your Crockpot out of that cabinet. Add about 1/3 cup of water in the Crockpot. And finally, place each pepper in the cooker. Cook the peppers on low for four to six hours.
